Recipe: Lighter Baked Macaroni & Cheese with Spinach & Red Peppers



We are getting into the days when hearty casseroles and warm cheesy things are starting to sound like a good idea again. My absolute favorite time of year. Put this casserole on your list — it's a veggie-filled riff on baked mac 'n' cheese that doesn't require a roux or even much prep at all, beyond cooking the pasta. It hits that sweet spot of comfort food that has enough redeeming nutritional qualities to justify having it both for dinner and lunch the next day.


This "lighter" baked macaroni and cheese casserole relies on a combination of cottage cheese, sour cream, and shredded cheese for its creamy base. This somewhat surprising combo is one I've been using for years, ever since discovering it in Heidi Swanson's recipe for Mushroom Casserole on her blog 101 Cookbooks. I love this sauce because it requires zero stovetop cooking or fussing with a roux to make bĂ©chamel, and it's just as creamy and satisfying. If you're not a fan of cottage cheese or even (gasp!) sour cream, never fear — everything melts together into one deliciously cheesy sauce.

I've made this casserole with both whole and low-fat versions of cottage cheese and sour cream, and honestly, I couldn't tell much of a difference. If you're looking to shave a few more calories off this dish, this is definitely an option. Just stay away from no-fat versions — they'll work, but you can definitely tell that the dish is lacking some essential awesomeness.



The only thing that needs cooking before throwing this casserole in the oven is the pasta. You can also assemble the whole shebang the evening or the morning before and put it in the oven when you walk in the door (just extend the initial, covered, cooking time by about 15 minutes). This casserole can also be frozen, uncooked or cooked; just cook the pasta very al dente so it doesn't get mushy.

Baked Macaroni & Cheese with Spinach & Red Peppers

Serves 8
 
12 ounces macaroni (2 1/2 cups dry macaroni)
12 to 16 ounces baby spinach (7 to 8 large handfuls)
2 large eggs
2 1/2 cups shredded cheddar cheese, divided
1 1/2 cups cottage cheese
3/4 cup sour cream
1 teaspoon salt
2 (12-ounce) jars roasted red peppers, drained and diced
Fresh pepper, to taste

Heat the oven to 350°F. Spray a 3-quart casserole dish with nonstick coating.

Bring a large pot of water to boil. Salt the water generously and add the macaroni. Cook until the pasta until it's just barely al dente — a little bit of chew is fine here. Drain and immediately transfer the hot pasta to a large mixing bowl.

Add the spinach and toss to combine. Cover the bowl with plastic wrap or a dinner plate and let the spinach wilt in the heat of the pasta for about 10 minutes. Shake the bowl occasionally to mix up the pasta and spinach — some of the spinach may not completely wilt; this is fine.

Whisk the eggs until well-combined, then whisk in 2 cups of the cheese, cottage cheese, sour cream, and salt. Pour the egg mixture over the pasta and wilted spinach. Add the diced red peppers and gently stir until combined and all the ingredients are evenly coated with sauce.

Transfer the macaroni and cheese to the baking dish. Cover tightly with foil. At this point, the casserole can be refrigerated for up to 24 hours before baking.

Bake, covered, for 30 minutes. Remove the foil and sprinkle the remaining 1/2 cup of cheese over the top of the casserole. Bake, uncovered, for another 15 to 20 minutes, until the cheese has melted and you can hear the casserole bubbling. (If baking straight from the fridge, extend the covered baking time to 45 minutes.)

Let the casserole cool for a few minutes before serving. Leftovers will keep, covered and refrigerated, for up to a week.

Recipe Notes


  • Substitute low-fat (1% or 2%) cottage cheese and sour cream if desired. Non-fat substitutes can also be used, but the casserole will be looser.
  • To freeze: The entire casserole can be frozen, baked or unbaked, but cook the pasta very al dente so it doesn't get mushy. Warm baked casseroles in the microwave or a low oven until warmed through. Cook unbaked casseroles straight from the freezer for an hour, then uncover, top with cheese, and continue baking until bubbly.

Easy Ways to Eat Seven a Day

A new study in the Journal of Epidemiology and Community Health found that adults who eat seven servings of fruits and veggies per day reduce their risk of premature death (e.g. from cancer and cardiovascular disease) by 42 percent. Find it challenging to eat your seven-a-day? Try these doable tips.


An apple a day? It might take a few more, according to a new study published in the Journal of Epidemiology and Community Health. After adjusting for factors including alcohol use, age, and physical activity, researchers found that adults who ate seven servings of fruits and veggies per day reduced their overall risk of premature death—particularly from cancer and cardiovascular disease—by 42 percent. Vegetable intake appeared to promote longevity the most.

Find it challenging to eat your seven-a-day? Try these doable tips.

Breakfast


  • Top Greek yogurt with sliced strawberries and fresh raspberries.
  • Stir 1 cup fresh blueberries into muffin or pancake mix.
  • Mix chopped kale into your scrambled eggs.

Lunch


  • Top cooked quinoa with sliced tomato and artichoke hearts. 
  • Blend up a batch of chilled gazpacho with cucumbers, tomatoes, peppers, and more. 
  • Top pizza with balsamic vinaigrette-dressed arugula.

Snack


  • Mash half an avocado with salt and pepper; spread on toast.
  • Pair lightly blanched broccoli florets with hummus.
  • Spear cherry tomatoes, basil leaves, and small mozzarella balls onto toothpicks.

Dinner


  • SautĂ© chopped or sliced red bell peppers, red onion, tomatoes, and cilantro; eat with soft corn tortillas.
  • Add capers, chopped olives, and roasted eggplant to linguini.
  • Drizzle carrots, beets, and parsnips with olive oil, salt, and pepper; roast until tender and serve with meat or fish.

The Difference Between Heirlooms, Hybrids, and GMOs

Know Your Produce - Perfect Produce Is Unnatural


There is nothing quite like the taste of a fresh fruit or vegetable straight from the garden. To the eye of the gardener, this vegetable picked ripe off of the vine is perfect. They nurtured it, carefully tended to it, and then finally, get to enjoy the fruit of their labors. However, compare this vegetable to one at the grocery store and it is suddenly asymmetrical, small, not candy apple red, and even has, gasp!, a brown spot.

To gardeners, this poses the question, “What is it about those grocery store vegetables that make them all so perfectly colored, perfectly big, and perfectly symmetrical? And, how did they become the standard of how a vegetable should look?” The truth of the matter is that they look perfect because they are unnatural.

In order to understand the differences between fresh produce from a garden and what you see on the average grocery store shelf, you’ve got to look far beyond what is apparent on the surface. In fact, it all comes down to the minutest material of the plant, it’s DNA. As we have gained an understanding of genetics, we’ve also learned how to manipulate the genetic material of the food we grow, for good, and for bad. Let’s take a look.

Heirlooms

We’ll start with what’s natural, the way fruits and vegetables have been grown and propagated for thousands of years. It’s a very simple concept: you save the seeds of a fruit or vegetable with favorable characteristics, (typically color, shape, size, and flavor), and plant them year after year. Other than selecting which fruit or vegetable seeds to save, the seeds are in no way manipulated. The plants are allowed to open pollinate and ripen in their own time. Today, we refer to these plants as heirlooms. Since seeds from heirloom plants can be harvested and planted year after year, a farmer or gardener never has to purchase those particular seeds again. In a sense, it’s the ultimate sustainable agriculture practice.

Hybrids

Heirlooms, however, like all things good and natural, are not perfect. They have a relatively small gene pool and typically lack disease resistance. As we began to learn more about the genetics of these heirlooms, certain varieties were cross-pollinated in order to create new varieties with disease resistance and traits that would enable them to grow in a wide variety of climates. In other words, rather than allowing the plants to open pollinate, two different varieties were purposely crossed to create a plant with specific traits, a hybrid.

These sorts of hybrids are a great blessing to farmers and gardeners who live in hot, humid, or very dry environments. They enable more people to grow their own food, decrease their pesticide usage, and live more sustainable lifestyles.

The one major downfall of these hybrids is that their seeds do not necessarily result in plants that are identical to the parent plant, so seeds cannot be saved.

For a gardener or small farmer, growing certain hybrid varieties is not a bad thing, by any means. However, in the mid 1900s, the agriculture industry began taking hybridization to the next level by selecting for traits that would benefit their industry, and thus, their profits. Size, shelf life, high yields, and aesthetics quickly became the top priority for food production. Why not right? Who wouldn’t want large quantities of produce on grocery store shelves? It all sounds great until you realize what traits are compromised to get these varieties—mainly nutrition and taste. Researchers often refer to the decrease in nutrient content when high yielding plant varieties are developed as the Genetic Dilution Effect.

Studies have found that nutrient content in many of the nation’s main food crops have dramatically decreased over the last century. For example, the protein in wheat, barley, and corn has decreased by approximately 40% since the 1940s. The calcium in broccoli has decreased by more than 50%. Furthermore, since these hybrid plants produce high yields of larger fruits and vegetables, more nutrient rich fertilizers must be applied to support their growth, resulting in more nutritional losses. Raspberries, for example, when fertilized with large amounts of phosphates, will produce double the yield, yet their mineral content decreases by 20-30%. So essentially, our grocery stores are packed with an abundance of big, beautiful fruits and vegetables, but their nutritional value has never been lower. And don’t forget taste. Taste isn’t typically on the high priority list when it comes to creating hybrid varieties for mass production.

Hopefully it’s starting to become apparent that when it comes to perfection, it’s all in the eye of the beholder. That home-grown tomato with a little brown spot is probably starting to become much more appealing than those “perfect” grocery store varieties that lack nutrition and flavor.

GMOs

The scary truth is that produce manipulation does not end with these tasteless hybrids. Here in the United States more genetically modified (GMOs) crops are being planted each year. These plants are created using biotechnology. Techniques such as, splicing, microinjection, viral carriers, and bacterial carriers create plant varieties that could never occur naturally. These methodologies give food scientists the ability to introduce favorable genes of completely unrelated species into food producing plants. Unfavorable genes can now also be silenced. Many of these food crops, particularly corn and soy, are ending up in common food products. These food products are not required to be labeled as containing GMOs, so there is no way to avoid them other than buying foods with an organic label.

Not only is this process unnatural, it also has the potential to be extremely dangerous to our health and the environment. A frequently used method for creating pest resistant plant varieties involves artificially inserting a toxin carrying gene from a soil bacterium, Bacillus thuringiensis, into plant DNA. The resulting plants then produce that toxin, which in turn will kill the larvae of their pests. It is currently unclear how this toxin affects humans. In a similar process, soy beans are genetically engineered so that they can tolerate high levels of pesticide application. As a result more toxic pesticides are being applied to these crops.

We shouldn’t be messing with Mother Nature though; she’ll always find a way around our ingenious ideas. Since the onset of this mass pesticide use, superweeds and superbugs have emerged that have adapted to the pesticides, so that they are in no way effected by them. Unfortunately these superweeds and superbugs have the potential to spread into our natural ecosystems and severely disrupt ecological balances.

It’s all pretty scary stuff, especially when you consider that Monsanto, the major U.S. company behind all of this genetic engineering, has gone so far as to patent their genomic creations. Farmers who elect to plant GMO crops must sign an agreement that they will not save seeds. Even worse, as wind, insects, and birds spread the seeds and pollen of GMO crops, heirloom crops become contaminated with the GMO DNA. Heirloom farmers have no way of knowing that their crops have been contaminated until they plant the compromised seeds. Monsanto has such a stronghold on the industry that when this occurs the heirloom farmers are sued for infringement on patent laws rather than Monsanto being penalized for contaminating the crops of these farmers.

Consumers, gardeners, and local farmers hold the power when it comes to fighting back against food modification. If we change our perception of the perfect produce and begin selecting fruits and vegetables that are locally grown, nutritious, and flavorful, agriculture will have no choice but to respond accordingly. It’s Darwinism at the grocery store level. We get to decide what is fit to stock the shelves and what isn’t!

Kale, That Special Someone

 

Finding that special someone is not an easy task. You may try out all different types before you settle on one, if you settle at all! This Valentine’s Day treat yourself (and possibly a romantic partner) to your favorite type of kale. There’s more than one you ask? Yes, yes my friends, there is more than one type of kale. Each type is exactly how we like ‘em – rich, health conscious, and the talk of the town.

Curly Kale: At the top of the popularity chain, it’s known for its distinct qualities. A little ruffled around the edges, but easy to chop when fresh. Some like ‘em younger, and we can’t blame them! The older they get the more bitter to the taste. Yeah, you can say that again.

Lacinato Kale (aka Dinosaur Kale): Don’t be turned off by the slightly wrinkly and firm touch. It is sweeter and more delicate than the curly kind, and holds its texture even after a match with the frying pan! These dark blue-green leaves may be the match for you.

Red Russian Kale: It’s always blushing, but can you blame it? Its red and purple leaves are often described as sweet, yet mild, with a bit of peppery-ness. Be sure to avoid its stem though. Unless you’re looking for a stomach ache – it’s hard to swallow!

Redbor Kale: Last but not least, is the most colorful of the bunch. Known for its looks, the deep red and purple leaves make for a great trophy plant! Yes it is edible, but it doesn’t hurt to sit and stare at each other before bringing out the cutting board.

Be sure to test out each type before making any hasty decisions. You’ll never know what you’re missing out on, unless you step out of your comfort zone! KALE UP!

16 Foods That Will Re-Grow from Kitchen Scraps

Looking for a healthy way to get more from your garden? Like to know your food is free of the pesticides and other nasties that are often sprayed on commercial crops? Re-growing food from your kitchen scraps is a good way to do it!
There’s nothing like eating your own homegrown veggies, and there are heaps of different foods that will re- grow from the scrap pieces that you’d normally throw out or put into your compost bin.
It’s fun. And very simple…if you know how to do it.
Just remember…the quality of the “parent” vegetable scrap will help to determine the quality of the re-growth. So, wherever possible, I recommend buying local organic produce, so you know your re-grown plants are fresh, healthy and free of chemical and genetic meddling.

Leeks, Scallions, Spring Onions and Fennel

You can either use the white root end of a vegetable that you have already cut, or buy a handful of new vegetables to use specifically for growing.
Simply place the white root end in a glass jar with a little water, and leave it in a sunny position. I keep mine in the kitchen window. The green leafy part of the plant will continue to shoot. When it’s time to cook, just snip off what you need from the green growth and leave the white root end in water to keep growing. Freshen up the water each week or so, and you’ll never have to buy them again.

Lemongrass

Lemongrass grows just like any other grass. To propagate it, place the root end (after you’ve cut the rest off) in a glass jar with a little water, and leave it in a sunny position.
Within a week or so, new growth will start to appear. Transplant your lemongrass into a pot and leave it in a sunny outdoor position. You can harvest your lemongrass when the stalks reach around a foot tall – just cut off what you need and leave the plant to keep growing.

Celery, Bok Choi, Romaine Lettuce & Cabbage

Similar to leeks, these vegetables will re-grow from the white root end. Cut the stalks off as you normally would, and place the root end in a shallow bowl of water – enough to cover the roots but not the top of your cutting. Place it in a sunny window position, occasionally spraying your cutting with water to keep the top moist.
After a few days, you should start to see roots and new leaves appear. After a week or so, transplant it into soil with just the leaves showing above the level of the soil. The plant will continue to grow, and within a few weeks it will sprout a whole new head.
Alternatively you can plant your cutting directly into soil (without starting the process in water) but you will need to keep the soil very moist for the first week until the new shoots start to appear.

Ginger

Ginger is very easy to re-grow. Simply plant a spare piece of ginger rhizome (the thick knobbly bit you cook with) in potting soil with the newest (ie. smallest) buds facing upward. Ginger enjoys filtered, not direct, sunlight in a warm moist environment.
Before long it will start to grow new shoots and roots. Once the plant is established and you’re ready to harvest, pull up the whole plant, roots and all. Remove a piece of the rhizome, and re-plant it to repeat the process.
Ginger also makes a very attractive house-plant, so if you don’t use a lot of ginger in your cooking you can still enjoy the lovely plant between harvests.

Potatoes

Re-growing potatoes is a great way to avoid waste, as you can re-grow potatoes from any old potato that has ‘eyes’ growing on it. Pick a potato that has robust eyes, and cut it into pieces around 2 inches square, ensuring each piece has at least one or two eyes. Leave the cut pieces to sit at room temperature for a day or two, which allows the cut areas to dry and callous over. This prevents the potato piece from rotting after you plant it, ensuring that the new shoots get the maximum nutrition from each potato piece.
Potato plants enjoy a high-nutrient environment, so it is best to turn compost through your soil before you plant them. Plant your potato pieces around 8 inches deep with the eye facing upward, and cover it with around 4 inches of soil, leaving the other 4 inches empty. As your plant begins to grow and more roots appear, add more soil. If your plant really takes off, mound more soil around the base of the plant to help support its growth.

Garlic

You can re-grow a plant from just a single clove – just plant it, root-end down, in a warm position with plenty of direct sunlight. The garlic will root itself and produce new shoots. Once established, cut back the shoots and the plant will put all its energy into producing a tasty big garlic bulb. And like ginger, you can repeat the process with your new bulb.

Onions

Onions are one of the easiest vegetables to propagate. Just cut off the root end of your onion, leaving a ½ inch of onion on the roots. Place it in a sunny position in your garden and cover the top with soil. Ensure the soil is kept moist. Onions prefer a warm sunny environment, so if you live in a colder climate, keep them in pots and move them indoors during frostier months.
As you use your home-grown onions, keep re-planting the root ends you cut off, and you’ll never need to buy onions again.

Sweet Potatoes

When planted, sweet potato will produce eye-shoots much like a potato. Bury all or part of a sweet potato under a thin layer of soil in a moist sunny location. New shoots will start to appear through the soil in a week or so. Once the shoots reach around four inches in height, remove them and re-plant them, allowing about 12 inches space between each plant. It will take around 4 months for your sweet potatoes to be ready. In the meantime, keep an eye out for slugs… they love sweet potatoes.
To propagate sweet potatoes, it is essential to use an organic source since most commercial growers spray their sweet potatoes to prevent them from shooting.

Mushroom

Mushrooms can be propagated from cuttings, but they’re one of the more difficult vegies to re-grow. They enjoy warm humidity and nutrient-rich soil, but have to compete with other fungus for survival in that environment. Although it is not their preferred climate, cooler environments give mushrooms a better chance of winning the race against other fungi.
Prepare a mix of soil and compost in a pot (not in the ground) so your re-growth is portable and you can control the temperature of your mushroom. I have found most success with a warm filtered light during the day and a cool temperature at night. Just remove the head of the mushroom and plant the stalk in the soil, leaving just the top exposed. In the right conditions, the base will grow a whole new head. (In my experience, you’ll know fairly quickly if your mushroom has taken to the soil as it will either start to grow or start to rot in the first few days).

Pineapple

To re-grow pineapples, you need to remove the green leafy piece at the top and ensure that no fruit remains attached. Either hold the crown firmly by the leaves and twist the stalk out, or you can cut the top off the pineapple and remove the remaining fruit flesh with a knife (otherwise it will rot after planting and may kill your plant). Carefully slice small, horizontal sections from the bottom of the crown until you see root buds (the small circles on the flat base of the stalk). Remove the bottom few layers of leaves leaving about an inch base at the bottom of the stalk.
Plant your pineapple crown in a warm and well drained environment. Water your plant regularly at first, reducing to weekly watering once the plant is established. You will see growth in the first few months but it will take around 2-3 years before you are eating your own home-grown pineapples.

And one for the kids….. ‘Pet’ Carrot Tops!!

I call this a ‘pet’ because the plant that re-grows from planting a carrot top will NOT produce edible carrots, only a new carrot plant. The vegetable itself is a taproot which can’t re-grow once it has been removed from the plant. But it makes an attractive flowering plant for the kitchen, and they’re easy and lots of fun to grow…for kids of all ages!
Cut the top off your carrot, leaving about an inch of vegetable at the root. Stick toothpicks into the sides of the carrot stump and balance it in a glass or jar. Fill the glass with water so that the level reaches the bottom of the cutting. Leave the glass in filtered, not direct, sunlight and ensure water is topped up to keep the bottom of your cutting wet. You’ll see roots sprout in a few days, and you can transplant your ‘pet’ carrot into soil after a week or so.
Your success re-growing lovely fresh vegies from scrap may vary, depending on your climate, the season, soil quality and sunlight available in your home or garden. And some vegies just propagate easier than others do. In my experience, a bit of trial and error is required, so don’t be afraid to do some experimenting. Get your hands dirty. It’s lots of fun! And there’s nothing like eating your own home-grown veggies.

How To: Add More Flaxseed To Your Family's Diet



Flaxseed is rich in Omega-3 alpha-linolenic acid and fiber, nutritional beneficials it is likely your family could use more of. If you have never purchased flaxseed, it is located in the baking section of most supermarkets. It is available as whole seeds or ground—finely ground flax seed yields the most nutritional benefits. Whole seeds can be ground using a blender or a coffee grinder. Here are few quick tips for adding more flaxseed into your family meals.

Pancakes:
 Add 1/4 cup ground flaxseed to your favorite pancake mix, and for extra flavor add 1 tablespoon of vanilla.

Pizza:
 Sprinkle 1/4 cup of ground flaxseed on your favorite homemade or frozen pizza. Cook according to normal directions.

Breads: Brush dinner rolls with olive oil, sprinkle the rolls with ground flaxseed, and warm them in the oven.

Breading:
 Add flaxseed (1 tablespoon – 1/4 cup) to your favorite bread crumbs and use this mixture as a coating for tofu, fish, poultry, or pork, or as a topping for casseroles, stuffed mushrooms, and more.

Veggies:
 Sprinkle ground flaxseed on hot vegetables just before serving OR sprinkle ground flaxseed on a salad and toss with dressing.

Breakfast: Add a teaspoon of ground flaxseed to yogurt, oatmeal, or granola.

Dessert: Sprinkle ground flaxseed on vanilla pudding, ice cream, or apple crisp.
