Seven Reasons to Eat More Dark Chocolate


More and more health reasons for eating dark chocolate keep coming in. Many will be pointed out here, then explained further in the sources indicated by numbers in parenthesis. But first, understand that organic dark chocolate brought into the market place under fair trade agreements is best.

Some of the major cheap chocolate producers use child slaves in Africa to pick cacao. The more dark the chocolate with less sugar, milk, and other ingredients, the closer it is to cacao. A range of at least 70% to 90% cacao in dark chocolate is both tasty and healthy.

Milk chocolate contains milk, which negates the health benefits, and sugar, which feeds cancer cells. Avoid it.

According to Dr. Debra Miller's statement in Chemistry Central Journal , "Cacao seeds are a 'Super Fruit' providing nutritive value beyond that of their macronutrient composition."

Interestingly, one doesn't have to gorge lots of chocolate every day to get the health benefits. A little treat, like a square or two daily will support good health.

A study of almost 20,000 participants in Germany concluded that those who ate 7.5 grams of dark chocolate a day received most of the heart protection benefits of chocolate. Organic dark chocolate bars are usually 100 grams.

Benefits of Dark Chocolate

Cardiac and stroke protection : Dark chocolate lowers blood pressure, which lowers risks of heart attacks and strokes.

Reduces risk of colon cancer : Cocoa polyphenols from dark chocolate reduce the risk of colorectal cancer. This was determined in a study by the Science and Technology Institute of Food and Nutrition in Spain, which was published in the journal Molecular Nutrition.

Healthy fats :The fat in chocolate does little to raise cholesterol. It contains abundant oleic acid, the type of fatty acid found in olive oil, which helps prevent heart disease and promote antioxidant activity.

Enhances glucose metabolism : Dark chocolate (70% plus) candy bars inhibit blood sugar issues to help prevent diabetes and obesity. How's that for a surprise!

Improves mood : Studies have shown that dark chocolate contains serotonin and increases endorphin production. It's a natural anti-depressant.

Improves brain function : Nottingham University professor Ian MacDonald used MRI analysis to determine improved brain activity with people who had just consumed cocoa drinks. 

Eases PMS issues : Here's a hint for husbands and boyfriends to give dark chocolate to your wives and lady friends.

There you have it
: many reasons to enjoy organic dark chocolate that is at least 70% cacao. There are brands with 80% to 90% as well. These aren't your kiddy chocolates with lots of sugar or milk or creamy nugget fillings, etc. They are semi-sweet at best.

The more bitter the better. It's not difficult to get used to if you really like chocolate. Enjoy chocolate with the knowledge that it's actually good for you.

Nut Butter Battle: Almond vs. Peanut

In recent years, almond butter was somehow anointed the chosen nut butter among health-conscious eaters, who smear it on their sprouted breads and gaze upon peanut butter as its low-brow relative.

But the creamy almond treat is not cheap (it's often about double the price of peanut), and when pressed, most people really can't tell you why they're willing to splurge.

So, we asked top nutritionists and health coaches to really break down the health differences between the two nut butters we're obsessed with most. (That is, unless you've already moved on to the new superfood-infused nut butters).

Which is better for you—almond or peanut? Welcome to the nut butter battle...

Macronutrients

When it comes to the big guys—carbs, protein, and fat—almond and peanut butter are like fraternal twins. "You can see a gram difference here or there, but it doesn't really make a difference," says Pure Nutrition founder Christian Henderson, MS, RD. A single two-tablespoon serving of either is high in calories (200) but comes with lots of protein (about 7g) and healthy fats.

Some nutritionists and health coaches point to almond's slightly higher concentration of good fats, but the difference is nominal. "Almonds have a little bit less saturated fat, but I feel a little bit silly saying that, since they're so close," says SPE Certified's senior culinary nutritionist Natalia Hancock, RD.

Micronutrients

Within the nitty gritty nutrients is where a difference starts to emerge between the butters.

"Almond is better for vitamin E and magnesium, which are two very important micronutrients," Henderson explains. "Vitamin E is an antioxidant and magnesium is important for bone health and your central nervous system." This is especially powerful since vitamin E is not found in a wide variety of foods.

Almond butter also has more calcium and iron than peanut.

Natural and Organic

No matter which nut butter you're choosing, looking out for added sugar and preservatives is a must; ingredient lists should include little more than plain old nuts. You can satisfy this requirement with either butter, but "when you go shopping for almond butter, it's almost all natural brands, you don’t see the Jiffy," says health coach and Sakara Life founder Danielle DuBoise. "It's just easier to choose a natural, no-added-sugar, no-preservatives almond butter."

And when it comes to organic, you have to be more careful with peanuts, says Henderson. "Peanuts are just one of those crops like soybeans and corn that are so overgrown and overprocessed in America. They're hard to grow, so many pesticides are often used on peanuts," she says. "If the peanut butter is not organic, you don’t want to be anywhere near it."

Other Factors

Aside for nutrition facts, there are a few other factors experts consider. Peanuts crops are susceptible to fungi called aflatoxins, which are associated with an array of diseases. The FDA does regulate the presence of aflatoxins, but some say you can't be too careful. "I worry about that, so I just err on the side of caution," DuBoise reasons.

Henderson also says that she's noticed from observations in her practice that almond butter has worked better for her clients struggling with weight loss. "Peanuts just tend to be more addictive for people; almonds tend to be more filling." Peanuts also may cause more bloating, since they're technically legumes, not nuts.

Taste and Uses

Of course, since both butters can be part of a healthy diet, a lot of decisions come down to which just works better, for your taste buds or whatever you're whipping up in the kitchen. "They each have their own place," says Hancock, who works with top chefs to create flavorful, healthy meals around the country. "I think peanut butter tastes better with bananas and almond tastes better with apples."

And while almond butter works really well in smoothies, peanut butter does tend to have more culinary uses, she says. "I'll use peanut butter in a stir fry, Thai style, and I do a really great African spicy sweet potato soup with peanut butter in it that’s really delicious."

Grass-Fed vs. Feedlot Beef - What's the difference?

If asked, most people could not tell you where the meat on their plate came from. In fact, if they wanted to know, it would be darned difficult – if not impossible – to find out. On the other hand, while they may imagine that the beef cow they are eating was once frolicking on lush green pastures, the average American today would NOT want to meet their dinner while it was still standing.

No, Virginia, not all cows eat grass.

That lovely image of a herd of cattle happily munching away and contentedly chewing their cud is mostly a figment of your imagination. Over the last 70 years, the beef industry has evolved into an intense, industrial enterprise designed to put as much weight on animals as fast as possible and get the resulting meat to market as quickly as possible.

To do that, beef cattle – who are by nature ruminants (grass eaters) – are hustled off the pasture where they spent their first six months of life to spend the next six to eight months packed into confined animal feeding operations (CAFOs) with no green pasture in sight. In those feedlots, they are fed grain – lots of grain – to bring them up to the target weight for slaughter. Since it takes as much as 7 pounds of grain (corn, barley, soybeans, and other grain) to develop a pound of meat and those cattle gain about 3 pounds a day, that’s a lot of feed.

At the same time, to keep the cattle gaining weight, they are given growth hormones and antibiotics. According to the Union of Concerned Scientists, 70% of all antibiotics used in the United States are fed to livestock. And, as many as six different growth hormones may be given to beef cattle, three of which occur naturally and three of which are synthetic.

Since those animals are eating 50 to 60 pounds of feed a day, a quick look at the source of that feed is important. Forty-four percent of the corn grown in the US is used for animal feed, and 86% of the corn planted in 2010 was bio-engineered varieties that contained insect- or herbicide-resistant genes (or both). Fifty-nine percent of the soybean harvest is crushed for oil, however the meal left over from the crush is used as animal feed. A whopping 94% of all soybeans grown are genetically engineered to be herbicide tolerant.

Meat and potatoes, please…

Researchers have linked serious health problems such as heart disease, stroke, diabetes, and certain types of cancer to heavy meat consumption. Americans eat more meat than ever before, and most of it is high in saturated fats.

We consume about 67 pounds of beef a year for each person – man, woman, and child. And those animals eat a lot of corn and other grain: most beef cattle are “finished” on grain before slaughter; only a very small percentage is entirely “grass-fed.”

Ah, back to that question – don’t cows eat grass? More and more farmers and ranchers are raising grass-fed beef on a natural diet consisting of fresh grasses, legumes, and other plants and allowing them to roam about.

Many are choosing to follow organic practices in their herd management, which are clearly healthier and more humane for the animals. The good news is that meat from those animals is free of antibiotics, steroids, hormones, pesticides, herbicides and other potentially toxic substances. The bad news is that it can take nearly two years to bring those animals to market on grass.

You Are What You Eat Eats Too


Studies have shown that an animal’s diet can have an impact on the nutritional content of the meat on the consumer’s table. Grass-fed meat has been shown to contain less fat, more beneficial fatty acids, and more vitamins and to be a good source of a variety of nutrients. According to a study published in the Journal of Animal Science in 2009, eating grass-fed beef provides many benefits to consumers.

Grass Fed Beef Benefits to Consumers

  • Lower in total fat
  • Higher in beta-carotene
  • Higher in vitamin E (alpha-tocopherol)
  • Higher in the B-vitamins thiamin and riboflavin
  • Higher in the minerals calcium, magnesium, and potassium
  • Higher in total omega-3s
  • A healthier ratio of omega-6 to omega-3 fatty acids (1.65 vs 4.84)
  • Higher in CLA (cis-9 trans-11), a potential cancer fighter
  • Higher in vaccenic acid (which can be transformed into CLA)
  • Lower in the saturated fats linked with heart disease
Lower Fat – Meat from grass-fed cattle is much lower in fat, and therefore lower in calories. A 6-ounce steak from a grass-finished animal has almost 100 fewer calories than the same sized-piece from a grain-fed animal. If, like the average American, you eat about 67 pounds of beef a year, switch to grass-fed beef and you’ll save nearly 18,000 calories a year.

Omega-3 Fatty Acids – Omega-3 fatty acids are fats that are essential to human health. Sixty percent of the fatty acids in grass is omega-3, which is formed in the chloroplasts of green leaves. Grass-fed cattle can contain as much as two-to-four times more omega-3 fatty acids than grain-fed animals.

At the same time, a high ratio of omega-6 to omega-3 fatty acids has been linked with an increased risk of cancer, cardiovascular disease, allergies, depression, obesity, and autoimmune disorders. A ratio of four to one or lower is considered ideal, Grain-fed beef has a much higher ratio of omega-6 to omega-3 fatty acids than wild game or grass-fed beef. In grass-fed beef the ratio is approximately 2 to 1, while the ratio in grain-fed beef is more than 14 to 1.

More Vitamins – In humans vitamin E is linked with la lower risk of heart disease and cancer. Meat from grass-fed cattle is higher in vitamin E.; as much as four times higher in vitamin E than meat from feedlot cattle.

Rich source of CLA – Meat from grass-fed animals is the richest known source of “conjugated linoleic acid” or CLA. Grass-fed cattle have been found to produce 2 to 5 times more CLA than cattle fed high grain feedlot diets. In laboratory animals, a diet containing even a small amount of CLA greatly reduced cancerous growths.

Finding grass fed meats in you community is getting much easier than it used to be as more and more small ranches are popping up across the USA. It's now common to find grass fed beef and lamb at local farmers markets. The best value is to buy the cow 'on the hoof' which means that you are buying the whole cow- bones, skin and all. The cow is then processed at a butcher and the individual cuts are delivered individually wrapped and labeled ready for your home freezer.

A growing trend among friends and family is sharing a whole cow (also known as cow-pooling, as in car-pooling). This is much easier for the rancher so he can pass the savings on to you. A 1/4 share of a whole grass fed cow usually results in between 150-250 pounds of finished beef depending on the breed and size of the cow.

Organic vs. Natural: They're Not The Same!


There's a lot of confusion out there about the distinction between organic and natural, and we think it's a shame, because the differences can be huge! The first thing you should understand is that, except for meat, "natural" doesn't have a set, strictly defined or regulated definition, while "organic" does.

When you see the word "natural" on food packaging, it can mean any number of different things, depending on where in the US you are, who the food manufacturer is and what store is carrying the product. In fact, you might be surprised to learn what can be considered "natural."

But the term "organic" is strictly defined in the US by uniform, federal regulations. "Organic" means the food or fiber bearing the label was made with a set of farming and production practices defined and regulated, in great detail, by the USDA.

When you see "organic" on a product label or packaging, you can be assured that the organic product was made without the use of toxic, persistent pesticides, GMOs, antibiotics or artificial growth hormones.
